A tender roasting joint with deep lasting flavour.

 

Cooking recommendation: Sear quickly to seal, cook on high for 20 minutes, then reduce to around 170 degrees, for 1 hour per kilo. Remove from oven and let rest for at least 20 minutes and serve it medium rare.

 

The leftovers are amazing for sandwiches too!
